Low Carb Pizza Crust take 1!

I am kinda new to the whole low carb thing.

The mechanic has always used this way of eating to drop pounds and keep them off.

Me, I love my bread, pasta, and all the sweets.

But after baby #5, I had to do something to lose some pounds. The regular calorie counting and working out was just not working for me anymore.

So this past November, I set off on the low carb diet adventure with the mechanics help. I am super happy to say that it has worked, down almost 50 since the baby came last June.

Most days I don’t even miss the carbs! Here lately though I have been craving new. We do normally stick to the same few low carb meals that we know. But I want more!

Low carb pizza crust seemed like a great way to go. There are so many recipes to choose from. I found one and just went with it.

It turned out not too bad, better than I thought it would. I will say it is not something I would want to eat all of the time but, still good.

I found the recipe at http://www.bewellassociates.com.

Ingredients:

3 eggs

1/2 cup coconut flour

2 tsp. onion powder

1 tsp. minced garlic (or one clove)

1/2 tsp. baking soda

1 tsp. oregano (optional)

Directions:

Heat oven to 375.

Line pan with parchment paper. (I have used foil but the crust gets really thick. You must grease with olive oil to prevent sticking)

Spread mixture onto parchment paper in the shape of a pizza. (I made several small, personalized sized crusts)

Bake for 15 minutes or until brown.

Flip over carefully and allow to cool for 10 minutes before removing parchment paper or foil.

Top with your favorite toppings and return to oven. Bake until cheese is bubbly.

This is how mine turned out. We topped it with peppers, onions, tomatoes, olives, and cheese.

Next time, I think I may try adding some cheese to the crust. Til then, I will continue to search for new low carb recipes.

Cabbage, Bacon, and Yumminess

I absolutely LOVE cabbage! Baked, boiled, grilled, fried…any way you cook it, I LOVE it!

But, this is my most favorite cabbage recipe of all. Thanks to The Biker Chick’s Kitchen for this most AMAZING Southern Fried Cabbage!

INGREDIENTS

The Biker Chick’s Kitchen
Southern Fried Cabbage
Serve 4 (or 2 hungry bikers)
5-6 strips of bacon
1 head cabbage, sliced
1 onion, diced
¼ cup chicken broth (I use low sodium broth)
1 tsp vinegar (optional)
½ tsp salt
¼ tsp pepper
In large skillet, (I use cast iron) fry the bacon until crispy, remove to a paper towel to drain
Place chopped cabbage and onion in the skillet with the bacon fat over medium heat and cook until it begins to wilt a bit
Crumble the bacon and add to the pan
Add in the chicken stock,vinegar, salt and pepper, cover and allow it to simmer for 10 minutes
Serve hot (try adding some diced apples, sliced sausage, noodles, or what ever tickles your fancy)

PREPARATION

In large skillet, (I use cast iron) fry the bacon until crispy, remove to a paper towel to drain

This is complete yummy goodness! And it’s what’s on the menu tonight served with smoked sausage!

Broccoli and Cheese Stuffed Chicken

I found this recipe on Facebook and it is yummy! We do leave out the flax seed, but other then that, everything else is the same.

Broccoli & Cheese Stuffed Chicken!

Ingredients:
1 small crown of broccoli
3 chicken breasts
Mrs. Dash Garlic & Herb
3 Tbsp shredded sharp cheddar cheese
3 Tbsp fat-free cream cheese
3 Tbsp ground flax seed
Spray oil (I used olive oil)

Directions:
Preheat oven to 400°

Spray baking dish with oil

Chop broccoli into small pieces

Wrap chicken breasts in plastic wrap and pound to less than 1/2 inch thickness with a meat-mallet

Sprinkle both sides of chicken with Mrs Dash, then turn so the “inside” is up.

Spread each breast with 1 Tbsp fat-free cream cheese

Sprinkle each breast with 1 Tbsp sharp-cheddar

Divide the broccoli among the breasts

Carefully roll up each breast, beginning with wide end, pressing filling in as needed

Use toothpicks to hold breasts in place

Sprinkle each breast with Mrs Dash, and 1 Tbsp ground flax seed

Bake at 400° for 30 minutes or until a meat thermometer reads 170° internal temperature.
